Rainier Cherry Glaze

2 cups Rainier cherries, pitted and chopped
⅓ cups red wine
1 tablespoons balsamic vinegar
1 tablespoons Datesy
1 pinch fresh thyme

Combine ingredients: In a small saucepan, stir to coat everything evenly.
Bring to a simmer: Set the pan over medium heat and bring the mixture to a gentle simmer, stirring occasionally as the cherries begin to break down.
Reduce and thicken: Lower the heat and let it simmer until the liquid reduces and the glaze thickens to a glossy, spoonable consistency. Mash a few cherries against the side of the pan if you'd like a smoother texture.
Finish and serve: Remove from heat and let cool slightly. Spoon warm over grilled pork chops, chicken, or anything that could use a little sweet-tart shine.
