Rainier Cherry Glaze

Serves: 4  |  Time: 20 minutes

    • 2 cups Rainier cherries, pitted and chopped

    • ⅓ cups red wine

    • 1 tablespoons balsamic vinegar

    • 1 tablespoons Datesy

    • 1 pinch fresh thyme

    1. Combine ingredients: In a small saucepan, stir to coat everything evenly.

    2. Bring to a simmer: Set the pan over medium heat and bring the mixture to a gentle simmer, stirring occasionally as the cherries begin to break down.

    3. Reduce and thicken: Lower the heat and let it simmer until the liquid reduces and the glaze thickens to a glossy, spoonable consistency. Mash a few cherries against the side of the pan if you'd like a smoother texture.

    4. Finish and serve: Remove from heat and let cool slightly. Spoon warm over grilled pork chops, chicken, or anything that could use a little sweet-tart shine.
